Crockpot Sesame Chicken

I will just say.... the pictures on Pinterest are so much prettier than what turns out in my kitchen.  Nevertheless, the food usually tastes pretty good.  So I guess I shouldn't judge a book by its cover.  This is a great crock pot recipe: Honey Sesame Chicken.  Very easy to make, healthy, and tasty!  This is great for any weeknight, though you do have to be careful with chicken in the crock pot.  I usually save chicken crock pot recipes for weekends because I wait until the last minute to put everything in the crock pot.  I'm not a fan of dried out chicken... Here ya go:

Crock Pot Honey Sesame Chicken
4 Boneless Chicken Breasts
S&P
1/2 cup Diced Onion
2 cloves Garlic
1 cup Honey
1/4 cup Ketchup
1/2 cup Low-Sodium Soy Sauce
2 T Olive Oil
4 tsp Cornstarch
Rice
1/2 T Sesame Seeds

Place chicken in crock pot, lightly season w/ S&P.  In a medium bowl, combine onion, garlic, honey, ketchup, soy sauce, and oil.  Pour over chicken.  Cook on low for 3-4 hours.

Remove chicken to a plate to shred into bite sized pieces.  Set aside.

Cook rice according to package directions.

In a small bowl, mix cornstarch and 1/3 cup water until dissolved.  Add to crock pot, stir well.  Cover and cook on high for 10 minutes, or until slightly thickened.

Add rice to plate, top with chicken and spoon sauce over top.  Sprinkle with sesame seeds and ENJOY!!! :)
