Crockpot Rustic Chicken

Happy New Year to the few of you who do read this!  What is your resolution for this year?  Chris and I usually don't make resolutions.  This is mainly because don't most people forget about them by April?  At least, that's when the Y is no longer busy.  Anyway, we decided to make a resolution this year.  We realized we watch WAY too much TV.  We decided to try to watch less TV and read more books.  We both love reading, but there always seems to be something we want to watch on TV but also a good book we want to read... decisions, decisions.  So this year, more reading and less TV watching :)

Anyway, here's a delicious chicken recipe you can make in the crock pot... it's super easy, healthy, and tasty!

Rustic Chicken
1 1/2 lb Chicken Tenders
15 oz Diced Tomatoes
15oz Artichoke Hearts
8 oz sliced Mushrooms
1 pack Dry Chicken Gravy Mix
1/4 cup Chicken Broth
S&P to taste

Combine chicken broth, tomatoes, artichoke hearts, and gravy in crock pot.  Mix well.  Add chicken and mushrooms, stir until everything is coated.  Cook 8 hours on low.


I served it over Egg Noodles but this it would be really good with rice too!  Enjoy :)
