Sweet Treats!

Here are a couple sweet treats I made this holiday season.  I know it's after Christmas, but of course I'm behind on the blogging.... better late than never, right?

Both of these are super easy to make and don't take a lot of time.  Here ya go:

Chocolate Peanut Butter Balls
2 1/2 cups Rice Krispy Cereal
3 cups Powdered Sugar
1 1/2 cups Creamy Peanut Butter
1/2 cup Butter (1 stick)
2 12 oz. bag of Chocolate Chips
Wooden Skewers

In a large bowl, mix cereal and sugar together.  Set aside.

In a saucepan, melt PB and butter on medium heat.  When it becomes liquid form, remove from heat and pour over cereal mixture.  Mix well until well combined.  Take mixture and form into 1 1/2 inch balls, place on a cookie sheet and put in the fridge to cool.

In a microwave safe bowl, melt the chocolate chips.  Warm in 20 second intervals until runny... about 1 minute.

Dip each PB Ball into chocolate, place on wax paper.  Put in the fridge to solidify and Enjoy!

Mine didn't turn out very pretty, but they were delicious none-the-less :)

The other treat I made was called "Christmas Crack" on Pinterest. But really, it's Toffee!  My first time making this and it was very delicious.  Chris took some to his office and they were a big hit.  Here ya go:

Terribly Terrific Toffee
1 cup Unsalted Butter (not margarine!)
1 cup Brown Sugar
2 cups Semi-Sweet Chocolate Chips (next time I'll use Milk Chocolate... it was a little bitter for my liking)
40 Saltine Crackers

Preheat oven to 350 Degrees.

Line a 15x10 inch jelly roll pan with foil, spray with non-stick spray.  Cover with one layer of crackers.

In a saucepan, melt the sugar and butter until boiling.  Reduce to a simmer, uncovered, for 5-6 minutes... stir occasionally.

Pour mixture over crackers, spread to coat evenly.  Bake for 8-10 minutes, or until the toffee becomes bubbly.  Remove from oven, let sit for a few minutes.

Sprinkle the chocolate chips on top of the toffee. After about a minute, spread them evenly over toffee.  Let cool, break apart, and enjoy!!!


Both of these were really good and could easily be made any time of year, not just in Winter!
