2 tsp Olive Oil
1 1/2 lbs Ground Beef (the recipe calls for italian sausage, but we aren't fans of that in our house)
2 Onions, chopped
4 Garlic Cloves
2 tsp Oregano
2 T Tomato Paste
28 oz Diced Tomatoes
6 cups Chicken Broth
2 Bay Leaves
8 oz Small Pasta
1/2 cup Fresh Basil
8 oz Ricotta
1/2 cup Parmesan
1/4 tsp Salt
Pepper
2 cups Shredded Mozzarella
In a large soup pot, head oil. Add ground beef and sauté, breaking it up into small pieces with a wooden spoon. Cook until no longer pink. Drain fat.
Add onions, saute for 1 minute. Add the tomato paste, sauté until paste turns a rusty brown... about 5 minutes. Add tomatoes with juice, broth, bay leaves and bring to a boil. Simmer for 30 minutes.
Add pasta, increase heat to medium-high, cook until pasta is tender. Stir in basil, season with S&P.
In a small bowl, combine ricotta, parmesan, S&P. To serve, place about 1 1/2 T of ricotta mixture in the bowl. Sprinkle with mozzarella cheese, ladle soup on top.
This is SO good and really does taste like lasagna. Enjoy :)
