Fried Rice... Third Time's the Charm

Fried Rice is becoming a staple in our house.. we always have all the ingredients and it's a super fast meal to make on any night of the week!  This is definitely my favorite recipe for Fried Rice that I have made so far.  I have also made Fried Rice Take 2 and my first attempt.  Here ya go:

Chicken Fried Rice
2 cups of Cooked Rice (about 1 cup uncooked)
1/2 pound Chicken, cooked
1/2 cup Frozen Peas and Corn
2 Garlic Cloves
2 Eggs
2 T Sesame Oil
1/3 cup Soy Sauce

Prepare rice according to package directions... I use a rice cooker: 1 cup of rice and 2 cups of water, microwave for 17-18 minutes.

Cook chicken on skillet.  Put about 1 T Oil in pan, cook 5-6 minutes per side.

Heat sesame oil in a large skillet on medium heat.  Add Garlic, Peas, Corn.   Stir fry until tender, about 5 minutes.  Shift everything to the side to make room for the eggs.  Crack eggs into pan and scramble, mincing throughout vegetables.

Add rice, chicken, and soy sauce to the pan. Mix throughout until heated through... about 2 minutes.  Enjoy!
