Twice Baked Potato Casserole

So if you're looking for a side dish to bring to a family gathering or dinner with friends... this is the one for you!  One important thing though-- it's probably not the healthiest :)  Anyway!  It's very tasty.  I tried to healthify it a little, though I'm not sure how healthy it actually was.  The ways I tried is in the recipe below.  But it was SO SO good!

Twice Baked Potato Casserole
1 1/2 lb. Red Potatoes, baked beforehand
1/4 tsp Salt
1/4 tsp Pepper
1 pound Bacon, cooked and crumbled
24 oz Sour Cream (light)
8 oz Shredded Mozzarella Cheese (low fat)
8oz Cheddar Cheese (2%)
2 Green Onions, sliced

Cut the baked potatoes into 1 inch cubes.  Mix together the potatoes, salt, pepper, bacon, sour cream, cheeses.

Bake, uncovered at 350 degrees for 20-25 minutes... or until cheeses are melted.
