Fried Rice Take 2

I am on a mission to find a really good fried rice recipe... Fried Rice from a restaurant is going to be filled with unnecessary calories.  I made one recipe earlier in the summer that I REALLY liked, Chris thought it was ok.  And let's be honest.  He is the one who loves Fried Rice, so I'm going to find a recipe that makes him happy.  This is a recipe I made via Iowa Girl Eats (my favorite Blog).  It was good, but I'm still trying to find a recipe that works for us.  Here is the recipe:

Easy Chicken Fried Rice
2 cups prepared Rice
1 Chicken Breast (one problem, I think I put in TOO much chicken....)
1/2 cup frozen veggies (peas and corns)
2 Green Onions
1 clove of Garlic (I think next time I'll add more)
1 Egg
3 tsp Sesame Oil, divided
2 T Soy Sauce (again, not enough... more next time!)

Whisk egg with 1 tsp of oil, set aside.

Heat 1 tsp oil in skillet over medium-high heat.  Add chicken and stir fry until cooked through.  Put on a plate and set aside.  **If you have left over chicken from another meal, use that and save yourself a step.

Heat the remaining oil in skillet and add veggies, green onions.  Stir fry until tender, about 2 minutes.   Add garlic and cook for about 30 seconds.  Push aside in the skillet, add the egg mixture and scramble.

Add cooked chicken, rice, and soy sauce.  Toss well and enjoy :)

This is a SUPER easy meal to make on a work night.  I do recommend it, but I'm still looking for Fried Rice recipes :)
