A Weekend Meal

Hello there! I have a great weekend meal for you to make.  I say that because it is fairly time consuming, and I prefer quick meals on the weeknights.  Sunday night I made Chicken Parmesan Wraps... delicious.  I have zero complaints about these.  You can serve these as part of a meal or as an appetizer.  Chris and I ate it as our meal on Sunday and it was delicious.  Here's the recipe:

Chicken Parmesan Wraps
8 oz raw Chicken (I have prepackaged chicken from Costco that I used so I had probably closer to 1 1/2 pounds... that's ok!  It makes a lot, freeze extra meat to make more wraps at a later time!)
1 cup Marinara Sauce, plus extra for dipping sauce
Egg Roll Wrappers/Wonton Wrappers
1 cup Baby Spinach
1/2 cup Mozzarella
1/4 cup Parmesan

Place chicken in a small pot, fill with enough water just to cover.  Bring to a boil, reduce heat slightly, then simmer for 10-12 minutes or until cooked through.  Drain, let cool for about 10 minutes.  Shred with two forks.  Mix chicken with marinara sauce.

Preheat over to 400 degrees.  Lay egg roll wrappers on a clean work surface.  Layer each with a few leaves of spinach, chicken, and cheeses.

Lightly brush two adjacent sides of the wrapper with water and fold opposite corners together.  Cover filling and press to seal on sides.  Repeat with as many wraps as you want or can fill.  *I made a total of 30 and STILL had meat left over)






Place wraps on a greased wire rack set over a cookie sheet, coat with cooking spray or brush with olive oil.  Bake for about 12 minutes, or until edges are golden brown.

Serve with warmed marinara sauce for dipping.. and extra mashed potatoes left over from Johnny's Italian Steakhouse :)  Enjoy!
