Pasta... w/ spinach!

Who would've thought that I like spinach?  I was always grossed out by cooked spinach as a child, but have really grown to love raw spinach.  I hate to admit it, but I'm starting to like cooked spinach.  I WILL NOT, repeat WILL NOT, eat cooked spinach alone.  That grosses me out.  But when it's mixed in with food it is definitely ok.  I found this Spaghetti recipe on Pinterest and wanted to give it a try.  Plus I made it my own by adding red pepper and cooked leftover chicken.  I love pasta and it looked really quick and easy to make on a week night.  Here ya go:

Spaghetti w/ Spinach, Garlic and Lemon
1 pound Pasta (I used rotini)
6 T Olive Oil
8 Garlic Cloves (yup, you'll have some bad breath afterwards)
1 Lemon, juiced
10 oz bag of Baby Spinach (I only had about 5 oz, it was definitely enough)
1/2 Red Pepper
1 Chicken Breast

In a skillet, heat 6 T olive oil over medium-low heat.  Add Garlic and cook for 5-7 minutes.  Add Lemon Juice, salt and pepper to taste.

Bring a large pot of water to a boil, cook pasta according to package directions.  Drain pasta, transfer to a large bowl.  Immediately add spinach, chopped Red Pepper, and Chopped Chicken (cooked obviously) and Lemon-Oil mixture.  Toss well, serve!

Very delicious, healthy, and quick to put together :)
