Ribs in the Crockpot

I am a big fan of crock pot meal, especially during the school year and especially when the weather starts getting cooler.  It's so nice coming home from a long day of work and dinner is done.  This is a GOOD recipe, but there is bad news.  There is some more preparation you have to do after the Ribs have been cooking all day... about 30 minutes worth.  It just took a lot longer to get onto my plate for dinner than I like, but that's okay.  It was still very tasty and I will make these again... with some ribs that are less fatty :)

Crock pot Ribs
1.5 T Paprika
1.5 T  Brown Sugar
1/8 tsp Cayenne Pepper
Salt and Pepper to Taste
3 lbs. Ribs
2 cups BBQ Sauce of your choice

Mix together the paprika, brown sugar, cayenne pepper, salt and pepper in a small bowl.  Rib the mixture on both sides of the ribs.

Arrange Ribs in slow cooker by standing them up against the wall of the crock pot.  **MAKE SURE TO SPRAY PAM FIRST** Put the thicker side down and the meaty side against the pot.  Pour BBQ Sauce over the ribs, cook for 6-8 hours.

Here comes the part that takes some time... though I do believe you could leave it out and they'd taste fine.  You could just brush fresh BBQ sauce on the ribs and serve.  Anyway...

After the 8 hours of cooking remove the ribs to a baking pan that has been lined with foil with a rack on top.  I used my cooling racks, which worked fine.  Set aside.

Pour the remaining juices from the slow cooker through a mesh strainer into a small pan.  Bring to a boil and allow to simmer, reducing by about 1/3.. about 15 minutes.

Put your oven's broiler on to heat up.  Brush the ribs with the sauce, put in broiler for about 4 minutes.  Take them out and CAREFULLY flip the ribs over, brush with sauce and broil again for 4 minutes.  Repeat again on both sides once.

Serve remaining sauce in a side dish and apply to ribs as needed.

This is a tasty recipe and the ribs are so moist and tender... it just takes some time once they are done in the crock pot.  Enjoy with some good ol' Mac & Cheese and a Salad.  ENJOY! :)
