Grilled Chicken w/ a Twist

Tired of just plain, grilled chicken?  I enjoy it every once and awhile, but I'm always looking for new ways to have grilled/baked/etc. chicken.  This is an awesome recipe and super easy to make: Caprese Grilled Chicken:











6 Grilled Chicken Breasts, boneless
1/4 Cup Balsamic Vinegar
1 T Butter
6 slices Fresh Mozarella Cheese
6 slices Tomato
6 Basil Leaves

Grill chicken.

As the chicken is cooking, pour the balsamic vinegar into sauce pan or skillet and cook until reduced by half.  **Personally, I'll use just plain Balsamic Vinegar next time and not make the reduction**  Add in butter and stir until completely combined.  Set Aside.

Top chicken with basil, cheese, and tomato slices.  Drizzle balsamic on top of chicken, serve warm.
