Spaghetti is my FAVORITE! :)

I could eat spaghetti every day.  Seriously.  I love it and my mom's recipe is my all time favorite, but I am always on the lookout for new recipes to try.  I found a crockpot recipe I want to try.  Let's be honest, it is the best when you come home from a long day of work and dinner is pretty much ready.  Anyway, I found this recipe on Pinterest.  It is very easy to make and it is DELICIOUS!!!  Here you go:

8 oz. uncooked Pasta (I used whole wheat spaghetti from Trader Joes)
Water
Salt
1 T Olive Oil
3 T Garlic
1- 28 oz can of Whole Peeled Tomatoes, drained and crushed (be careful when you crush them... I got tomato juice on my shirt)
3 oz Cream Cheese (I used reduced fat)
2 Handfuls Spinach
1/4 cup Fresh Basil
1/2 oz Shredded Parmesan

Cook pasta according to package directions.  The original recipe says to reserve some of the cooking water when you are finished but you DO NOT need to!  It was like eating soup.  

Heat a large skillet over medium-low heat.  Add oil and garlic, cook for 2 minutes.  Stir in 1/4 tsp salt and tomatoes, cook for 3 minutes.  Continue crushing the tomatoes at this time.  Stir in cream cheese and mix until smooth.  Add in pasta and spinach and cook for about 3 minutes.  

Top with basil and parmesan cheese... ENJOY!  


I loved this recipe and will definitely make it again.  It was easy to make on a week night and took hardly any time. I decided to add in a bunch of spinach (the original recipe didn't call for it) to add some veggies, I wasn't really in the mood to make a salad that night.  I highly recommend... enjoy!
