Taco Salad

Mmmm here is a great recipe for Taco Salad.  I was inspired by this recipe I found on Pinterest.  I decided to make it my own because I was making a lot of chicken this week and I didn't want to make the dressing because my hubby isn't a huge fan of mayo.  Oh the things you do for love :)    Anyway, the link for the original recipe is above, but here is what I did:

Taco Salad
1 lb. Ground Turkey
Taco Seasoning
Lettuce, chopped
Tomato, chopped
Sweet Corn
Black Beans (oops... forgot this)
1 Avocado (forgot this as well... brain fart!)
Red Pepper
1 Handful of Doritos, crushed

In a medium pan, cook ground turkey until no longer pink. Add taco seasoning according to directions and let simmer until most of the water evaporates.

While cooking, assemble salad. Start with the lettuce.  Top with tomato, corn, beans, avocado, red pepper.  When ground turkey is finished, put the amount you want on top of your salad.  Finally, top off with one handful of crushed Doritos.  Top with dressing of your choice and enjoy :) 

I decided to make my own homemade dressing because I bought a set of mason jars last week.  I think they're really cute, it's a great way to store food, and also make your own sauces such as salad dressing!

Dressing
2 T Olive Oil
1 T Balsamic Vinegar

Combine both ingredients in jar.  Shake.  Put on top of salad.

Enjoy!
