I got the motivation to make this recipe from this website. The recipe looked really tasty, but I was in the mood for something a little more simple than Brie and Brisket Quesadillas. Now Chris and I love eating tacos and any Mexican food so I thought I would use part of this recipe to make my own tacos. So I decided to make the Brisket in the crock pot as the recipe says and that is it. So here is what I did:
Brisket Tacos
3 lb Brisket
1 can Diet Coke
Salt and Pepper to Taste
3 cloves Garlic
Taco Shells (flour, corn, hard shell, soft shell... whatever works)
Taco Fixings (tomato, lettuce, cheese, salsa, sour cream, guacamole, etc.)
Spray crock pot with cooking spray (I always seem to forget this step...). Set Brisket in crock pot. Rub salt, pepper, and garlic onto Brisket. Cover with Diet Coke. Set on low for 8 hours.
When finished, get brisket out of crock pot and let it sit for 10 minutes or so. Shred brisket and put into large bowl.
Place desired amount of Brisket on taco shell (I prefer flour). Top with desired fixings and Enjoy!
This recipe is so easy and delicious, and you really could use this meat for anything. Next time I want to add in some BBQ sauce and enjoy some pulled Brisket sandwiches. Because the meat is cooked in Diet Coke it comes out SO SO tender and just melts in your mouth. I will be making Brisket this way again :) Enjoy!
