I've been wanting to make this recipe for quite awhile as my sister recommended it to me from the Gwyneth Paltrow cookbook. It's call Chicken Milanese and it's SO quick and easy to make. The best way to describe it is pan fried chicken. What makes it tasty is what you make as your topping on the chicken. With my obsession with avocados going strong, I chose a tomato and avocado salad to top it. Here you go:
Chicken Milanese
4 Chicken Breasts
1 cup Milk
2 cups Plain Bread Crumbs
1/2 cup Olive Oil
Use a mallet to pound the chicken breasts, put in between wax paper, until very thin. Dip the chicken into milk and then bread crumbs. Make sure the whole chicken breast gets covered with bread crumbs.
Heat 1/4 cup of the Olive Oil in skillet, this will allow you to cook 2 of the chicken breasts at a time. Place chicken in skillet. Cook for about 4-5 minutes on first side, flip and cook for 3-4 minutes on the other side. Clean out the skillet, add the other 1/4 cup and cook the other 2 pieces of chicken.
While the chicken is cooking, prepare the Tomato and Avocado Salad:
Tomato and Avocado Salad
1 Avocado, peeled and chopped
1 cup Cherry Tomatoes, quartered
1/4 cup Red Onion, chopped
1 T Cilantro leaves
1 T Olive Oil
2 Limes
Combine avocado, tomato, onion, and cilantro in a bowl. Top with olive oil and juice of 1 lime. Top your Chicken Milanese with mixture and enjoy. Cut the second lemon into wedges, placing on the plate to squeeze over chicken. (Our second obsession this summer besides avocado is lime... soooo tasty on this meal!!!)
I decided to pair this with a nice big side salad with lots of fresh veggies I picked up at Trader Joe's. Super easy meal that I will definitely make during the school year. Enjoy!
