BALTs you ask? Shouldn't it be BLT? Well, yes. But I can't seem to eat anything this summer without adding a little avocado :) Plus I love this, it is such an easy and fast meal to make. To healthify it you can use turkey bacon, whole wheat toast, and lots and lots of lettuce and tomato on top! Next time, Chris and I are going to make our BALTs into a wrap, using a whole wheat tortilla. I admit, I did not use turkey bacon... Chris isn't a huge fan and let's be, honest real bacon is awesome!
I'm sure you all know how to make them, but here you go:
BALTs
2 Bacon slices
1 Avocado, sliced
1 Tomato slice
1/2 Romano Lettuce Leaf
2 pieces of Bread
Mayonaise (opt)
Start with the bacon. Cover a microwave safe dish with two layers of paper towels (it seems like a waste, but trust me. I started with one layer and added another...) Lay your bacon on the paper towel. Cover with one layer of paper towels. Microwave at 1 minute increments, flipping bacon over after each minute. Cook until at desired crispiness. About 4-5 minutes.
While bacon is cooking, toast your bread. Slice avocado and tomato.
Time to assemble! Start with mayo on your bread if you want. About 1 T on each slice, or whatever you like. I don't usually measure, this is a guess :) Layer on the bacon, desired amount of avocado, tomato slice, and lettuce. Put second piece of toast on top, ENJOY!
And of course, you can't enjoy this without some summertime Sweet Corn :)
