It was such a great vacation, but it is always nice to come home. We had a great week and a half of eating out and trying all sorts of restaurants in Colorado and California. I was pretty excited to cook dinner last night at home. I ate well on vacation, but I really wanted to have something light and summery. Plus it's WAY too hot in Iowa to do a lot of cooking. I found these great recipes on Pinterest (naturally) that I wanted to try. I made a Honey-Lime Marinade for Chicken, a side of Summer Cous Cous, and of course some Sweet Corn from Grimes. The sweet corn right now is ridiculously tasty :) We will be eating it a lot the next few weeks and freezing a lot of it to have in the middle of winter! Here are the recipes:
3 T Soy Sauce
2 T Honey
1 T Vegetable Oil
Juice of 1 Lime
2 Garlic Cloves
2 T Cilantro
1 lb Chicken
In a small bowl, whisk together all the ingredients through the cilantro. Cut chicken into 1 square inch cubes. Pour marinade over chicken for at least 1 hour (in fridge). Before grilling, put chicken onto skewers. Grill and enjoy :)
Chicken on Skewers
1 cup Water
1 cup Whole Wheat Cous Cous (found at Trader Joe's!!)
1/4 cups Olive Oil
1 Lemon, Juiced
1 cup Diced Tomatoes
1 Avocado, diced
1 Garlic Clove
1/2 tsp Salt, to taste
1/2 tsp Pepper, to taste
Parmesan Cheese
Bring water to a boil. Add Cous Cous, take off heat and stir. Let sit for 5 minutes.
While cous cous is cooking, whisk together the olive oil, lemon juice, and garlic in a small bowl.
When cous cous is ready, add to a medium bowl with tomato and avocado. Add olive oil mixture, stir well. Add salt and better to taste. Garnish with Parmesan cheese. Serve and room temperature or cold, it's delicious either way!
It doesn't look too pretty, but it is very delicious.
Enjoy the chicken and cous cous with some fresh sweet corn! Chris and I, thanks to our friend Kate, have discovered a new way to eat sweet corn. All you have to to do is take a wedge of lime and squeeze the juice onto the corn until the whole cob is covered. Absolutely delicious :)
