Very easy and quite delicious :) This makes a TON of pasta. So make it for a big group of people or enjoy it throughout the week. We enjoyed it with a side of sweet corn (so good right now!!!) and some green beans. Love these summer meals.
1 lb. Shaped Pasta
1 pint Cherry tomatoes, halved
1 large Cucumber, seeded and chopped
1 Red Pepper
1/2 (or 1) Green Pepper
4 Green Onions
3/4 cup Kalamata Olives (I left these out... We are not fans of olives)
1-1/2 cups Feta Cheese
7 oz Pepperoni, sliced
1/2 cup Greek Salad Dressing
Cook pasta according to package directions. While cooking, chop up desired vegetables. **The nice thing about pasta salad is that you can add or subtract ANY veggies you want!**
In a large bowl, combine pasta, tomatoes, cucumber, peppers, onion, cheese, and pepperoni. Toss the salad with the dressing. You can add more dressing as you wish. Cover and chill.
You may want to add a little bit of dressing before serving, but I enjoyed it as was. Enjoy!
