His and Hers Tacos

So it's been awhile since I've made a new recipe at home.  We went out of town for a bit then the school year started... so I was a little lazy with cooking last week.  But that's ok!  This weekend I had time to make a new recipe: Cilantro Lime Tilapia Tacos.  This is a very easy and quick recipe to make, and very healthy.  Now, Chris doesn't eat fish... so I made him his very own Black Bean Tacos.  I even made up the recipe for it, and he says he liked it.  Here are both recipes:


1 lb. Tilapia Fillets
1 tsp. Olive Oil 
1 small Onion
4 Garlic Cloves
2 Jalapeno Peppers (I left theses out)
2 cups Diced Tomatoes (fresh or canned... I used fresh)
1/4 cup Cilantro
3 T Lime Juice (about 1 1/2 limes)
salt and pepper to taste
Tortillas
1 Avocado, sliced
Lime wedges for garnish

Heat olive oil in a skillet.  Sauté onion until translucent, then add garlic.  Cook for a couple minutes, until garlic is slightly browned.  

Place tilapia on the skillet and cook until the fish starts to flake, 4-5 minutes.  Add peppers, tomatoes, cilantro, and lime juice.  Saute over medium--high heat for about 5 minutes breaking up the fish with a spoon or spatula.  Season with salt and pepper to taste.  

Spoon a some of tilapia mixture on top of tortilla, top with some avocado and enjoy :)

Now, if one of you doesn't like fish you can make these black bean tacos in a small pan.  It takes just about the same amount of time as the tilapia tacos.

Black Bean Tacos

1 can of Black Beans, do not drain
1/4 cup of water
Salsa
Cheese
Avocado

In a pan, heat up black beans and water.  Bring to a simmer and allow liquid to boil off.  This takes about 10 minutes.  While cooking, mash the beans and stir constantly.

Put beans, tomato, cheese, and avocado on a tortilla.  Enjoy :)
