We had my in-laws over for dinner last night. We went for the basic hamburger and sweet corn for dinner, but I wanted to make something new. My mom made this pasta salad recipe awhile ago and she said it was really good, so I thought I'd give it a try. I'm a sucker for pasta salads... And I forgot to take a picture, so enjoy the picture from the website :)
Pasta with Tomatoes, Feta, and Balsamic Dressing
6 oz uncooked Shaped Pasta
2 cups Grape Tomatoes, halved
1 cup Green Grapes, halved
1/3 cup Sliced Basil Leaves
2 T Balsamic Vinegar
2 T Shallots
2 tsp Capers
1 tsp Dijon Mustard
1/2 tsp Minced Garlic
1/2 tsp Salt
1/4 tsp Olive Oil
4 oz Feta Cheese
Cook pasta, combine with tomatoes, grapes, and basil in a large bowl.
In a smaller bowl, whisk together vinegar, shallots, capers, mustard, garlic, salt. Gradually add oil, whisk constantly. Drizzle over pasta mixture, toss well. Add cheese, toss well.
It was easy to make and very delicious. My husband and father in-law do NOT like mustard. My husband couldn't taste it, but my father in-law claims he could taste it... not sure if I believe it. :) I'm sure you can leave that out if you want! Enjoy!
