Summer Veggie Salsa

Thanks to PINTEREST for another yummy recipe :)  My mom's birthday was this weekend and I was in charge of an appetizer.  Naturally, I wanted to try something new.  I found this salsa on pinterest and decided to give it a try.  It is very light, refreshing, and tasty.  Though, there is something about the classic salsa.  I have another recipe that I have kind of made my own based on a variety of recipes for salsa... I will share at a later time :)

Summer Veggie Salsa
1 lb. Tomatoes, diced
1 medium Red Pepper, diced
1 medium Yellow Pepper, diced
1 medium Orange Pepper, diced
1/2 Lage Carrot, diced
1/2 cup Corn Kernels
2 T Cilantro
2 T Parsley
1 Jalapeño (I left this out, but if you like spice you should definitely add it)
2 T Fresh Lemon Juice
1 tsp Salt
1/4 tsp Pepper
1 medium Avocado, diced

Combine all ingredients except the avocado in a medium mixing bowl.  Refrigerate for at least an hour.  Just before serving, add the avocado and adjust seasoning to taste.  Enjoy with tortilla chips, on tacos, etc.


This was a delicious salsa recipe and I am slowly starting to eat peppers (no green peppers though please.)  Not sure if I will make this again as I have another salsa recipe I like better, and this took a long time because I had to cut all the veggies myself.  But it's still very good and I do recommend it!  ENJOY :)
