Pasta for a Hot Day!

I was totally in the mood for pasta tonight, but the traditional stuff sounded heavy on this warmer day.  Luckily I found this recipe on Pinterest and it was very delicious (and healthy!)  Perfect for a warm day PLUS easy to make after a long day of taking a class about integrating iPads into the classroom.  Plus we got to enjoy it outside with the pooch!

Chris thought it was funny how he got cut out of the picture and it was all about Charlie... :)

Spaghetti with Sautéed Chicken and Grape Tomatoes
2 Skinless Chicken Breast, diced into cubes
cooking spray
1/2 tsp Oregano
1/2 tsp Basil
Salt and Pepper to taste
8 oz. Spaghetti
2 cups Grape Tomatoes, halved
6 cloves of Garlic, smashed
5 tsp Olive Oil
4 T Fresh Basil (I did not have this, but it was just fine)

Bring large pot of salted water to a boil.

While waiting, season chicken with salt, pepper, oregano and basil.  Heat a large skillet on high heat.  when hot, spray with oil and add chicken.  Cook about 3-4 minutes, or until no longer pink.  Remove from heat and set aside.

Add pasta and cook according to package directions.

While cooking, add olive oil to skillet on high heat.  Add garlic and sauté until golden brown.  Add tomatoes, salt and pepper, reduce heat to medium low.  Sauté about 4-5 minutes.  When pasta is finished, add to tomatoes and toss well.  (This was difficult, so add left over pasta water if pasta is too dried out)  Add fresh basil and chicken, toss and serve.  ENJOY :)
