Bruschetta Chicken

I have been on vacation this week so I haven't been cooking... it's been quite nice!  Here is a recipe I made for Mother's Day.  Healthy, Quick, and very delicious!

Bruschetta Chicken
4 small Chicken Breast Halves (about 1 lb)
1/4 cup Sun Dried Tomato Vinaigrette Dressing
1 Tomato finely chopped
1/2 cup shredded Mozzarella Cheese
1/4 cup Chopped Basil, or 1 tsp dried Basil Leaves

Place chicken in a a large resealable bag, add some of the 1/4 cup dressing.  Seal bag, make sure chicken gets coated.  Let sit for 10 minutes up to an hour.

Preheat grill to medium.  Cover half the grill with heavy duty foil.  Place chicken on the uncovered side of the grill, cook for 6 minutes.  While cooking, combine the rest of the dressing, tomatoes, cheese, and basil together.

Turn chicken over and place on top of the foil.  Top each piece with the tomato mixture.  Grill, covered for 8 minutes or until chicken is done.


This is super healthy and delicious :)
