Cheesy Potatoes... on the Grill!

Here is a great recipe for grilling season... Grilled Cheesy Potatoes.  I made these when we had some friends over and it definitely made plenty of food for everyone to enjoy.  It takes awhile to chop the potatoes, though you can easily buy frozen cubed potatoes and use that.  It would save you a lot of time.  Anyway, here is the recipe!

Grilled Cheese Potatoes
3 large Potatoes, peeled and cut into 1 inch cubes
1 medium Onion
3 T Parmesan Cheese
1 T minced Chives
1/2 tsp Salt
1/4 tsp Pepper
2 T Butter
1/2 cup crumbled Bacon (I left this out)
1/2 cup shredded Mozzarella Cheese
1/2 cup shredded Cheddar Cheese

In a large bowl, combine first 6 ingredients.  Make a bowl out of double thickness, heavy duty foil, transfer ingredients to bowl.  Dot with butter.

Fold foil around potato mixture and seal.  Grill, covered, over medium heat for 15-18 min, stir and continue for 15-18 more minutes.

Open foil, spring with bacon and cheese.  Grill for 5 more minutes, or until cheese is melted.  Open to let steam escape.


This is very delicious and a great side for grill outs with friends and family!  Enjoy! I'm off to the pool in Las Vegas now :)
