Found this recipe on my favorite blog... Iowa Girl Eats :) It's been so hot recently that I wanted a lighter meal that was tasty. Thankfully, she posted this recipe this week and I knew I had to make it. It's so yummy. I paired it with her recipe for Cilantro-Lime Cauliflower rice... yup sounds weird, right? Well, it was very delicious and a great way to change up your veggies. Even my husband (!) ate it! If you don't like cauliflower, just mix the chicken, mango salsa, and cauliflower all together and you won't even know you're eating cauliflower. I also made a couple baked potatoes for another side... mainly because they are getting soft and we need to eat them :) It's quite tasty... enjoy!
Key West Chicken with Cilantro-Lime Cauliflower Rice
Chicken:
1/4 cup Soy Sauce
1/4 cup Honey
3 T Vegetable/Canola Oil
3 T Lime Juice (about 2 limes)
3 Garlic Cloves
1/2 Jalapeño (I did not include this)
4 Chicken Breasts
Whisk together all ingredients in a small bowl. Place chicken in ziplock bag and pour mixture on top. Squish to coat chicken in marinade, then refrigerate for 1-8 hours. Grill chicken over medium-high heat.
Mango Salsa:
1 Mango, chopped
1/2 Jalapeño (again, I left this out)
2 Green Onion
1 Garlic Clove
1/4 cup Cilantro, chopped
Juice of 1 lime
salt and pepper to taste
Combine all ingredients. Refrigerate until ready to use. (This salsa is YUMMY! I think it'd be really good on top of steak)
Cauliflower Rice:
6 cup shredded cauliflower (about 1 head)
4 tsp Vegetable Oil
salt
2 T Lime Juice
1/4 cup Cilantro, chopped
Shred cauliflower in food processor or by hand with a grater. Heat oil in a large skillet over medium-high heat. Add cauliflower, season with salt, then sauté until soft and just starting to turn golden brown. This takes about 10 minutes. Turn off the heat and add 1 T lime juice and cilantro. Taste and add lime juice to your liking.
Enjoy! This really did not take long to make and it was light, tasty, and healthy! :)
