It's been awhile...

So I've gotten pretty lazy with the blogging... It's been a long 2 1/2 months since winter break.  My life Monday-Friday has become super busy.  Then the weekend comes, I do my errands and get my cleaning done, and then all I want to do is laze around.  I'm in desperate need of a vacation....  

A LONGGGGG time ago, I think in January, I made a delicious dish called "Honey Balsamic Chicken."  EASIEST recipe ever.  And it's super healthy too.  Spring break is about a week away so I've been trying so hard to be healthy.  I do need to repeat this recipe because it's fast and easy to make, and it's good for you.

Start by cooking chicken in a skillet.  You cover the chicken in some thyme, salt, and pepper.  I use the chicken tenders from Costco, and it took probably bout 12-15 minutes to cook all the way through.

While the chicken is cooking you can mix the Balsamic Vinegar and Honey Sauce.  Sounds weird, but they compliment each other really well.


After the chicken is finished, put it on the plate.  Transfer the sauce to the heated pan to cook for about a minute, or until it thickens.


Then you pour the sauce over the chicken and enjoy :)  See?!? SO EASY!  Total cooking time is less than 20 minutes which is my ideal cooking time on a week night.  I believe Chris and I enjoyed it with some Jasmine rice and a side salad, which is pretty typical for us.  It was delicious and it makes really good leftovers!


Here's the recipe:


Ingredients
1½ tsp dried thyme
½ tsp table salt
¼ tsp black pepper
1 tsp olive oil
1 pound(s) uncooked boneless skinless chicken breast(s)
2 Tbsp balsamic vinegar
2 Tbsp honey

Instructions
1. Combine first 3 ingredients; sprinkle over both sides of chicken.
2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.
3. Transfer chicken to a platter; keep warm. Reduce heat to medium-low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken. Yield: 4 servings (serving size: 1 chicken breast half).
