The BEST Beef Stroganoff!

I am always a fan of crockpot meals.  On Tuesdays and Thursdays I teach After School Assistance so I get home later, which makes me not want to cook dinner.  I have tried to start doing crockpot meals on Tuesdays or Thursdays, making enough leftovers.  If I don't do a crockpot meal, I make enough of something earlier in the week so we can have leftovers.

Tonight I make Beef Stroganoff.  I have been craving this for awhile, being German I love Beef Stroganoff.  My grandma has a very yummy recipe that I like to make and I have also made it before with the packet of Stroganoff seasoning from the grocery store.  I was pretty excited when I saw this recipe for Beef Stroganoff  made in the crockpot because those are such easy meals!  And of all places, I found it on Pinterest!

Here is the recipe:

Slow Cooker Beef Stroganoff (direct link to recipe)


 2 Lbs of beef stew meat
1 cup chopped onion (I blended it, surprise)
1 can condensed Cream of Mushroom Soup (10 3/4 oz)
1 can condensed Cream of Chicken Soup (10 3/4 oz)
1 6oz jar of mushrooms, drained
1/4 tsp pepper
8 oz Cream Cheese, chopped
8 oz Sour Cream
Cooked Noodles or Rice


In slow cooker add beef, onion, soups, mushrooms, and pepper.  Cover and cook on low for 8 hours.  Stir in Cream Cheese until melted.  Stir in Sour Cream.  Serve over cooked noodles or rice.  



Now of course I healthified my dinner tonight.  Looking at this recipe, it could easily be full of calories and not good for you at all.  Here are some things I did to make it a little bit better for you:
  • I cut off the big chunks of fat off the stew meat 
  • 99% fat free Cream of Mushroom Soup and Cream of Chicken Soup
  • 1/3 fat Cream Cheese (Fat Free kind of tastes weird, but 1/3 tastes just fine!)
  • Fat Free Sour Cream
You don't have to do all of those things to make your meal healthier.  Try one thing, or two.  It tasted so great the way I made it!  And it was basically ready when I got home... what more could I ask for?  I have seen a recipe for Chicken Stroganoff-- I think I might have to make that sometime.  Chicken is better for you than red meat.


This really is the BEST I've had.  The Cream Cheese makes it so creamy and delicious.  And the meat was so tender it just melted in my mouth.  It was amazing!  I HIGHLY recommend this recipe... so delicious :)  I really wanted to have seconds, but I'm trying to be really good about portion control and I did not need more, but it was so tempting.  I'm looking forward to leftovers tomorrow at lunch!
