I finally cooked a new meal tonight! On the menu: Spinach Tomato Orzo Soup. Yes, it was really warm today, but I really wanted this soup! Very easy soup to make and turns out it is quite delicious:
Spinach Tomato Orzo Soup
1 large onion, blended in the food processor (i HATE chunks of onion)
2 cloves of garlic, chopped
1 lb spinach, fresh or frozen
1 15oz can of Italian Tomatoes
1 lb package orzo pasta
2 quarts chicken stock (8 cups!)
2 quart of water
Olive Oil
Preheat soup dish. Drizzle in olive oil. Add onions and sauté until tender. Add garlic and sauté for 2-3 minutes. Add canned tomatoes, spinach, chicken stock, and water. Bring to boil and reduce heat to medium. Add in orzo and cook for about 12 minutes.
It's really easy and turns out delicious. It's super healthy too! Even though I forgot the 2 quarts of water (which I didn't notice until I was typing this!) it still tasted fine. I did use chicken broth instead of stock, so maybe I didn't need to water it down? When I put the spinach in it freaked Chris and I out because it was SO green. But once it started boiling, things starting getting mixed together.

Anyway, it turned out delicious. NEXT time I am going to buy a rotisserie chicken and add it to the soup. I was hungry about an hour after dinner because of the lack of protein. Also I would add another can of tomatoes, there weren't quite enough tomatoes. I may add a couple things, but it was still really good. VERY easy to make on an evening after a long day of work and going for a run because it was 65 today!!! January 30 and it is almost 70? What is up with this winter?
For tomorrow I am making beef stroganoff in the crock pot... I'm pretty excited :)
