Mmmm this is a summertime staple! I've made this a few times and it's so delicious. I have taken a couple recipes and came up with a recipe that Chris and I really like. At the bottom I have a recipe for what I call Salsamole... guacamole topped with salsa.
Homemade Salsa
1- 14.5 oz can Whole Tomatoes
1- 10 oz can Rotel
1/2 small Onion
1 clove of Garlic
1/4 tsp Sugar
1/4 tsp Salt
1/4 cup Cilantro (or a handful... whatever you want!)
1 T Lime Juice
Blend all ingredients in a food processor. Add cilantro and lime juice to taste. If you want something with more spice you can add 1/2 a Jalapeño and/or a pinch of Ground Cumin.
My favorite way to enjoy this salsa is as Salsamole... I got this idea from Iowa Girl Eats! You start by making Guacamole. Here is how I make mine:
Sarah's Guacamole
2 Avocados mashed to your liking
1/4 cup Salsa
1 T Lime Juice
Combine all ingredients to the consistency of your liking.
Once you have made your guacamole, top with homemade salsa so guacamole is completely covered with salsa. Enjoy with chips! It's so easy to make and a crowd please for sure :)
