Oh boy, I made this recipe FOREVER ago. I actually made it for Chris' birthday back in April. Where has time gone?? Well, school is out for summer and I am DETERMINED to do a better job at posting recipes that I make. I have three new recipes I am making this week and I plan on posting it the day after I make it now that I am on summer break and I have time.
Here is the delicious recipe of Spinach-Tomato Pasta via Eat Yourself Skinny Blog that I made way back in April. It is very easy to make, it takes very little time, and is very healthy for you:
Spinach-Tomato Pasta
3/4 lb. whole wheat pasta shells
1 T butter
1 shallot (I left this out)
1/4 tsp crushed red pepper (I also left this out)
5 oz baby spinach
1/2 c Chicken Broth (fat free)
1/4 half and half (I used skim milk and it was fine!)
1 oz. Parmesan Cheese
1/2 tsp Pepper
1 8 oz container grape tomatoes
1 T parsley *optional*
Cook pasta according to directions on package. While cooking, heat butter in a large skillet over medium heat. Add your sliced shallot and red pepper, cook for 1-2 minutes. Add spinach and broth. Cover and cook for 1 minute. Add half and half, 3/4 of the Parmesan, and pepper. Stir to combine and cook for 3 minutes. Remove from heat.
Add tomatoes and cooked pasta, toss together. Add remaining cheese on top and ENJOY :)
