1 3/4 cup Chicken Broth
1 cup rinsed Quinoa
2 cloves Garlic
Whatever Veggies you have.... here's what I used:
1/2 Red Pepper
2 ears Sweet Corn, cut kernels off
1 vine-ripened tomato
salt/pepper to taste
1/2 cup Feta
2 T Fresh Basil (or 1/2 T dried)
Honey Lemon Vinaigrette:
1 T Lemon Zest
2 T Lemon Juice (About one lemon)
2 1/2 T Honey
1 clove of Garlic
1/2 tsp salt
1/4 tsp pepper
Bring broth to boil, add rinsed quinoa and turn down heat to a simmer. Cook for about 20 minutes.
While quinoa is cooking, combine all ingredients for honey lemon vinaigrette. Whisk together in a bowl.
Heat oil in large skillet over medium heat. Add garlic and sauté for about 30 seconds (until golden brown). Add red pepper and sweet corn. Saute until slightly tender, about 5 minutes. Add cooked quinoa and half the dressing, cook for about 1 minute.
Add remaining vinaigrette, tomatoes, feta, and basil. Stir well, add salt and pepper to taste. Let cool for 10 minutes before serving.
This was an OK recipe. I really liked the mixture of Quinoa and veggies, I think it would be great as a side dish, it was a little much as just the main part of my meal. Also, I need to find a different dressing to put on it. I think this vinaigrette was a little too sweet, plus I am not a huge fan of lemon zest. Also, I have eased off the cheese and I am not huge on feta. I think Chèvre or mozzarella would be fantastic in this instead.
