This is delicious.... :) (AND EASY!)
Crockpot Cranberry Pork Roast
3 lb Lean, Boneless Pork Loin (trim the fat off)
16 oz Can Cranberry Sauce (whole or just juice)
1 T Brown Sugar
1 tsp Yellow Mustard
2 T Cornstarch
2 T Water
In small bowl, mix cranberry sauce, brown sugar and mustard. Pour over the roast in the crockpot. You can brown the roast in a skillet prior to putting in the crockpot, that is optional. Cover crock pot lid, cook on low for 7-8 hours.
Remove roast and set aside. In a large bowl, whisk together cornstarch and water. Scoop cranberry mixture from crockpot into large bowl and whisk together with the cornstarch mix. Place in microwave and cook on high for 2 minutes, or until thickened to your liking.
Place pork roast on platter and shred. Top with Cranberry Sauce and serve on top of couscous, rice, noodles, or eat it plain!
This recipe is DELICIOUS and very easy to make. The best part is it's a crockpot meal and takes minimal prep time. Great meal for a busy work day. Enjoy :)
