Avocado Chicken Parmesan

Earlier this week I made Avocado Chicken Parmesan... umm delicious.  Give me anything with avocado and I'm sold.  I found this recipe via Pinterest last summer when I first joined, and finally decided to make it.  It's definitely super delicious and if you like avocado and Chicken Parmesan, you'll love this! (And shocking... I did not get this from Iowa Girl Eats!)

Anyway.  This was really easy to make, though a little more prep than I like on a Thursday night.  This is because on Thursdays, I usually don't have time to start making dinner until 7 because I work later and I like to workout.  So usually, Thursdays would be a night for simple food.  That's ok that, I really wanted this!

First all you do is bread your chicken:  First, you coat it in flour.  After you shake off the excess flour you coat it in egg/milk mixture and then coat it in bread crumbs.  I used plain bread crumbs, though I think Parmesan bread crumbs would be delicious.  Use as much chicken as you wish, use a meat tenderizer to get it to about 1/2 inch think.

Put your chicken in the pan... Don't forget PAM!!!  (I always seem to forget)  Cook it for about 15-20 minutes at 400 degrees Fahrenheit.  Flip the chicken half way through so the bottom doesn't get soggy.  You want the chicken just about done when you take it out of the oven.

Take the chicken out of the oven.  On each piece of chicken, put a tablespoon worth of marinara sauce onto each piece of chicken.  I don't like too much sauce, but if you like a lot, put as much as you want on. I used plain Jane sauce from Dahl's, it was what they had on sale :)  You could go fancier, but I thought it tasted just fine.  Heat up the extra sauce to have with the finished product.

Next up, pile on the avocado!  I only needed one avocado, and I sliced it into thin slices.  On top of the avocado you pile on the mozzarella cheese!  Put on enough to cover the avocado.


After you have all the goodies on top of the chicken, put it back into the oven for about 10 minutes.  Or until the cheese is melted and the chicken is completely cooked through.


SO GOOD!   The chicken was really juicy, the avocado was delish, and the cheese was gooey.  What more could I have asked for?  This will most likely make an appearance into our regular rotation.  Easy to make and really delicious.  I served the chicken with cooked whole wheat spaghetti noodles topped with the heated up spaghetti sauce. (I admit I got lazy w/ this meal... no veggies)



Here is the direct link to the recipe... this recipe says to only cook the chicken for about 10 minutes before piling on the goodies, but it wasn't near done.  The chicken probably needs 15-20 minutes before you put on the sauce, avocado, and cheese.
