Chicken Tortilla Soup

This recipe is delicious and so easy :)  I am always looking for good recipes for the crockpot.  Now that I am working, I don't have the same desire to cook a meal as I do during the summer.  This is a great recipe we got from our good friends Matt and Jenna!

The best part is, you just throw everything into the crockpot and 8 hours later it's ready.  ALSO, there is no prep time.  You open some cans and pour it all in on top of some chicken.

Chicken Tortilla Soup


chicken breast halves (I trim all fat off)

2 cans (15 oz) black beans, undrained
2 cans Rotel tomatoes (mild, medium or hot)
1 cup salsa (mild, medium or hot)
1 can (4 oz) chopped green chilies
1 can (15 oz) tomato sauce
for serving: tortilla chips
                   shredded cheddar cheese
1. Combine all ingredients except chips & cheese in crockpot
2. Cover and cook on low for 8 hours
3. Before serving, remove chicken breasts and shred into bite size pieces. Stir back intosoup
4. To serve, put handful of chips in each soup bowl. Ladle soup over chips & top with cheese
