I haven't posted a blog about a recipe recently. I honestly feel like I haven't been in the kitchen very much since I started my job. It's a GREAT reason, but I miss having time to plan out fun meals and taking the time to make them. Now by the time I leave work, workout then get home it's almost 7pm. Who wants to start cooking at 7pm? So, we are back to the simple meals. We have also been eating out a little more-- which I need to be better about eating HEALTHY when we do go out to eat. I used to consider eating out my time to eat whatever. But you know, I'll get into the swing of things :)
Anyway, tonight we ate at Panera. It's so easy to eat healthy at Panera. Greek Salad and some soup. Delish.

Well, on Sunday night, I actually had time to think about dinner and make something yummy and new! Thanks to my new favorite place to find recipes,
Pinterest, I was able to find something that was perfect for a summer meal. I made some
Cheesy, Chicken, Bacon, and Avocado Quesadillas. I'm pretty sure I love all of those ingredients so how could we go wrong??
The combination of all the ingredients... yum :) No complaints. I paired this meal with some delicious Iowa sweetcorn (which is perfect right now!) and also a salad with some tomatoes, carrots, and cucumbers. Such a summery meal and so easy to make. We also went ahead and grilled a pound and a half of chicken... we did NOT use all of that. We maybe used 1/3 of a pound. Now with the new job, that gave us leftovers for the week. On Monday night, I made a pasta salad for lunches for the week. (I am not a sandwich person...)
I highly recommend this recipe-- it's so easy to make! What takes the longest is cooking the bacon, and then cutting everything up. Enjoy :)
