Then I married Chris, who has a very Italian mother. Her sauce is amazing too! So now that we are married, I have started making big batches of both pasta sauces and freezing them. Right now I have both sauces in the freezer and it's always a surprise which one we are going to have for dinner... it's quite exciting. (I know, lame... but this is married life people!)
Anyway, I am obsessed with Iowa Girl Eats and I read it every day. Well, a couple of weeks ago, she posted a recipe for a spaghetti sauce that has only 3 ingredients. I was thinking, ok? Only 3 ingredients? How good could it be? Want to know what the 3 ingredients were?
- 28 oz. Can of Whole Peeled tomatoes
- 5 T of Butter
- 1 Onion
So your'e thinking where is the flavor coming from? Most sauces have basil, oregano, garlic, etc... Well she RAVED about the sauce so I would give it a try. I love my two sauces that I always keep in the freezer, along with some good stuff from Trader Joes, but I'm always open to new recipes. I hate that I get in a rut with cooking, so I thought bring it on.
I was surprised how yummy this sauce was. I do NOT like onions, but I am a fan of the flavor. It was so light and refreshing with the chunks of tomato. I was so happy there was some leftovers. I have a LONG week of conferences this week, so it was nice to have leftover pasta for dinner tonight. Make this sauce-- it might be a little time consuming, but it's worth it. The prep is literally throwing everything into the pot.
Speaking of conferences, I am fully enjoying my first experience with conferences. I will admit that I am EXHAUSTED!!! But I love it and I love talking up my students to the parents. I have a great group of kids, no behavior problems, so conferences are going really well. Tomorrow we have 7 1/2 hours of conferences, but thankfully we get the day off on Friday. Chris is taking the day off with me and I'm looking forward to spending the day with him. We promised no cleaning, no soccer, no errands, we're just going to take it easy.
